Small Batch Chocolate Chip Cookies

Because sometimes you just need a cookie. Or 12.

When there are only two people living in a house for most days of the week and you love to bake but you also know you need to stop (or minimize) eating cookies and brownies, it kind of sucks the fun out baking. But I was determined to figure out how to make just a small batch of chocolate chip cookies. Because sometimes life calls for cookies, and dammit, I want to eat the cookies.

So I found a recipe online for a small batch. And they were ok, but not perfect. I like a soft cookie, not a crunchy cookie. So I’ve been manipulating the ingredients and I think I’ve mastered it, honestly. And I’m sure I’m not the only one to come up with this — I’m sure it exists already out there on the internet somewhere. I just haven’t seen it in this exact iteration before and I love this one. So when you’ve got company popping over in 30 minutes and you need something to have on the counter, this is the perfect thing. Enjoy!

Small Batch Chewy Chocolate Chip Cookies

Ingredients

  • ¼ cup butter, softened

  • ¼ cup light brown sugar, packed

  • 2 tablespoons white sugar

  • 1 large egg yolk

  • ½ teaspoon vanilla extract

  • ½ cup all purpose flour

  • 1 tablespoon corn starch

  • ¼ teaspoon baking soda

  • ¼ teaspoon salt

  • ½ cup semi sweet chocolate chips

Directions

  • Preheat oven to 350. Line baking tray with parchment paper.

  • Using a hand mixer, cream together sugars and softened butter until light and fluffy. Mix in egg yolk and vanilla.

  • Add in flour, corn starch, baking soda and salt and mix until combined.

  • Mix in chocolate chips. (I use the mixer for this, too, just to incorporate the chips evenly.)

  • Using a tablespoon, drop 12 cookies (as evenly sized as possible) onto baking sheet.

  • Bake for 8-10 minutes, rotating halfway through.

  • When cookies are just brown on the edges and starting to brown on top, they are done. They may still be a little bit puffy but if they’re slightly browned, they’ll be perfect. Take them out and let them cool on the tray for 5 minutes. Then remove to a wire rack to cool completely.

  • They should be flatter and crinkly and soft and chewy. Enjoy!

These last well for a day or two, but I doubt they’ll make it that long. 😋
